    Baking Mix - Strawberry Lemon Pancake


      Savor this citrus berry breakfast special with a side of your morning coffee and topped off with some of your favorite fresh fruit or even our divine strawberry jam. These warm gooey treats are sure to have your Mondays feeling like Fridays ;).  

      Ingredients: Organic; Flour, Cane Sugar, Lemon Zest, Baking Powder, Baking Soda, and Dehydrated Strawberries, Apple Juice Concentrate, Sunflower Oil, Non-GMO Pacific Coarse Salt.

      Makes 8-10 4-inch pancakes.

      You will need:

      • 1 cup Milk and 1 tsp Lemon Juice (or 1 cup Buttermilk)
      • 1 tsp Vanilla
      • 1 Egg
      • 3 tbsp Melted Butter


      1. Rehydrate the strawberries in 1/2 cup hot water or fruit juice for 5 minutes
      2. Strain berries from liquid
      3. Whisk the dried ingredients in a large bowl, then blend in milk, lemon juice (or butter milk), and egg until smooth. Do not overmix.
      4. Stir in melted butter. Fold in stawberries. Heat a non-stick skillet over medium heat. 
      5. Pour batter onto hot griddle and cook each side until golden brown.
